Apple Fennel Slaw

Ingredients:

  • 2 bulbs fennel

  • 1 - 2 green apples

  • 1 bunch flat parsley

  • 1.5 lemons, juiced and zested

  • Salt & pepper


Instructions:

Use a mandolin or knife to slice the apple and fennel as thin as possible.

Toss into a bowl with chopped parsley, add lemon juice, lemon zest, and plenty of salt and pepper to taste. Easy peasy!
