Grilled Tacos That Don’t Require A Grill

Ingredients:

  • 2 chicken breasts

  • one full bell pepper

  • one-half sweet onion

  • 6 corn tortillas

  • All the toppings you prefer. I like shredded cheese, sour cream, Texas Pete Hot Sauce and fresh limes to squeeze.

  • Consider some sliced avocado, pickled onion, or jalapenos.


Directions:

First, prep your chicken. Cut off all those pieces that look a little discolored. All that extra fat? Cut it. The slimy film that's coating the entire outside of your chicken? Wash it. Wash your hands frequently, and season your dried, prepped chicken with adobo, garlic powder and black pepper. Next, wash the veggies. Cut in long strips, don't dice. Season with salt and pepper.

Next, get a medium sized pan on medium heat with a light coating of grease before adding your onions and peppers. Mix in pan thoroughly. Cook these down to your liking - I prefer my peppers and onions well done.

In a large pan, bring up to a high-heat setting (not full heat, but close). Once the pan is hot, add a generous amount of butter to the pan - it will burn a bit. Next, add your seasoned chicken and leave on this heat for 2 full minutes, covered with a lid. After two mins, flip the chicken, move the heat down (close to low setting) and put the lid back on. Move the chicken around to soak in more of the juices. After two mins on the other side, remove the lid, flip the chicken back and forth every three mins. After ~9 more mins, your chicken will be done!

Pop your tortillas in a very hot pan - flip until fully cooked - add your chicken, onions, peppers, cheese - enjoy!
