Carrot Casserole
“I’m obsessed simply because it is delicious! Everyone loves to hate when they hear the words ‘carrot casserole,’ but it brings me so much joy when they come back around and say that they are sorry, and it really is so delicious!”

What pairs best with this recipe?
I love carrot casserole with a heavy winter meal! My family always has it on Thanksgiving and Christmas! But really, it can (and should) be enjoyed all year long.
What were some of your 2024 obsessions?
In 2024, I definitely became even more obsessed with TikTok than I already was! And of course, Brat Summer!
Peel 1 medium sized bag of carrots. Slice the carrots and boil until tender.
Chop 1 small onion (fine).
Mix the cooked carrots and onions with 1 can cream of celery soup, half can of milk, 1 tbs of flour, 1 tsp of dried mustard, some pepper and 2 cups shredded cheddar cheese.
Butter a baking dish and pour in mixture.
In a separate bowl, crush a sleeve of Ritz crackers and combine with melted butter.
Add the coated Ritz crackers over the casserole.
Bake at 350 until the mixture bubbles. (about 30-40 minutes)
ENJOY!!!!
