Fried Okra

 

“I grew up going to Thanksgiving at my Great Aunt's house in South Carolina. In addition to the traditional southern Thanksgiving fare, she'd cook up a batch of fried okra for me (my favorite).”

Ingredients:

  • 1 lb okra

  • 1 cup cornmeal

  • 0.5 cup flour

  • Garlic powder

  • Pepper

  • Cayenne (optional)

  • Cajun seasoning (optional)

  • Vegetable oil

  • Salt


Directions:

  1. Heat oil in skillet

  2. Slice okra - 0.25-0.5"" rounds

  3. Add dry ingredients to a large ziploc bag or paper bag

  4. Whisk eggs in a bowl and coat okra in whisked egg

  5. Add okra to the bag with dry ingredients

  6. Shake to coat

  7. Fry okra in skillet (in batches) until golden brown

  8. Remove from skillet and add salt
