Ingredients:


  • 1 sleeve of club crackers (about 40 crackers)

  • 1 cup (2 sticks) unsalted butter

  • 1 cup brown sugar (light or dark, your choice!)

  • 1 cup semi-sweet chocolate chips

  • 1/2 cup crushed peppermint candies or candy canes


Directions:

  1. Preheat & Prep: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or aluminum foil, making sure to cover the edges. Lay the club crackers in a single layer, edge to edge, across the sheet.

  2. Make the Caramel Magic: In a medium saucepan, melt the butter over medium heat. Add the brown sugar and stir until it’s fully dissolved. Bring the mixture to a boil and let it bubble for 3-4 minutes, stirring constantly, until it thickens slightly.

  3. Pour & Bake: Carefully pour the hot caramel mixture evenly over the crackers. Spread it gently with a spatula if needed. Pop the tray in the oven for 8-10 minutes, until the caramel is bubbling.

  4. Chocolate Bliss: Remove the tray from the oven and immediately sprinkle the chocolate chips over the bubbling caramel. Let them sit for 1-2 minutes to melt, then spread the chocolate evenly with a spatula or the back of a spoon.

  5. Peppermint Crunch: While the chocolate is still warm, sprinkle the crushed peppermint candies generously over the top.

  6. Chill & Break: Let the bark cool completely (you can speed this up by popping it in the fridge or freezer for about 30 minutes). Once set, break it into random pieces with your hands or a knife.
