(Greek Yogurt and Orange Cake)

Ingredients:


  • 450g phyllo dough (12 sheets)

  • 4 eggs

  • 200g sugar

  • 250g Greek yogurt

  • 250ml sunflower oil

  • 2 tsp baking powder

  • Zest of 2 oranges

For Syrup:


  • 500ml water

  • 400g sugar

  • Peel of 1 orange

  • 1 cinnamon stick


Instructions:

  1. Prepare Syrup: Boil water, sugar, orange peel, and cinnamon for 10 minutes. Cool completely.

  2. Prep Phyllo: Tear phyllo into small pieces; leave to dry out for 30 minutes.

  3. Make Batter: Whisk eggs and sugar until frothy. Mix in yogurt, oil, baking powder, and orange zest.

  4. Combine: Fold in dried phyllo pieces until evenly mixed.

  5. Bake: Pour into a greased 9x13"" pan. Bake at 350°F (175°C) for 40-45 minutes.

  6. Add Syrup: Pour cold syrup over hot cake. Let absorb before serving.

  7. Enjoy chilled or at room temperature!
